Start your day right with a delicious bowl of cinnamon-apple red quinoa porridge made with creamy almond milk.
Ingredients:
  • 1 cup red quinoa, rinsed and drained
  • 2 cups water
  • 1 apple - peeled, cored and diced
  • 1 tablespoon ground cinnamon
  • 2 tablespoons maple syrup
  • 0.33333334326744 cup sliced almonds
  • 1.5 cups almond milk
  • 1 tablespoon half-and-half cream, or to taste
Instructions:
  • In a saucepan over high heat, cook the quinoa and water until boiling. Reduce heat, cover, and simmer for 15 to 20 minutes until quinoa is tender and water is absorbed.
  • In a large skillet over medium heat, melt the butter. Add the apple, then sprinkle with salt, cinnamon, and maple syrup. Stir in the almonds and cook until the apple begins to soften, about 2 to 3 minutes. Pour in the almond milk and half-and-half, and continue cooking until hot. Add the hot quinoa, stir, and cook for a few more minutes before serving.
