Create a cozy winter morning with apricot quinoa porridge for breakfast.
Ingredients:
  • 200g quinoa
  • 310ml milk
  • 62.50 ml dried apricot, chopped
  • 20.00 gm caster sugar
  • Fresh fruit, to serve
  • Honey, to serve
Instructions:
  • In a saucepan over medium heat, combine quinoa and 2 1/2 cups (625ml) water. Bring to a boil, then reduce heat to low and simmer covered for 10 minutes.
  • Pour in the milk and apricot, and gently mix. Cook covered, stirring occasionally, for 10 minutes or until the quinoa is tender. Finally, stir in the caster sugar.
  • Ladle the warm porridge into individual bowls, and artfully arrange fresh fruit on top. Finish by delicately drizzling honey over each bowl before serving.
