Quinoa and broccolini fried rice

Spicy, fiber-rich rice - a quick, healthy side dish.
Ingredients:
  • 18.40 gm rice bran oil
  • 1 red capsicum, thinly sliced
  • 2 celery stalks, sliced diagonally
  • 2 bunches broccolini, trimmed, sliced diagonally
  • 2cm piece fresh ginger, peeled, cut into thin matchsticks
  • 2 garlic cloves, crushed
  • 2 long red chillies, sliced
  • 65.63 gm soy sauce
  • 40.00 ml Chinese rice wine
  • 1/2 tsp sesame oil
  • 2 x 250g packets microwave rice and quinoa mix
  • 2 green onions, thinly sliced diagonally
Instructions:
  • 1. Preheat a wok on high heat, then swirl in oil to coat. 2. Toss in capsicum, celery, and broccolini, stir-fry for 2-3 minutes until capsicum begins to soften. 3. Introduce ginger, garlic, and chili, stir-fry for 30 seconds until aromatic.
  • Combine soy sauce, rice wine, and sesame oil in a jug while you wait.
  • Combine the rice mix in the wok, stir-frying to heat through and break up any lumps for 2 to 3 minutes. Add the sauce mixture and green onions, continuing to stir-fry until well combined. Season with salt and pepper, then serve.
