Sweet quinoa and broccoli soup.
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 0.5 onion, diced
  • 2 cloves garlic, minced
  • 2 cups broccoli florets
  • 2 cups water
  • 1 cup quinoa
  • 2 cubes chicken bouillon
  • 1 (12 fluid ounce) can fat-free evaporated milk
  • 1 tablespoon all-purpose flour
  • salt and ground black pepper to taste
Instructions:
  • In a skillet, heat olive oil over medium heat. Sauté onion and garlic until tender, around 5 minutes. Add broccoli, water, quinoa, and chicken bouillon cubes; bring to a boil, stirring to dissolve bouillon cubes. Cover, lower the heat, and simmer until quinoa is fluffy, for 10 to 15 minutes. Enjoy!
  • Combine evaporated milk and flour into the quinoa, then bring to a boil over high heat. Stir continuously until the mixture thickens, approximately 5 minutes. Season with salt and pepper before serving.
