Quick and nutritious vegetarian meal featuring kale, broccoli, and almonds in partnership with SunRice and taste.com.au.
Ingredients:
  • 375.00 ml Naturally Rice & Quinoa
  • 1 head broccoli, cut into long florets
  • 36.40 gm extra-virgin olive oil
  • 4 garlic cloves, thinly sliced
  • 1 bunch kale, trimmed, thinly shredded
  • 30.00 ml cider vinegar
  • 165.00 ml low-fat cottage cheese
  • 1/3 natural slivered almonds, toasted
  • 20.00 ml chopped chives
Instructions:
  • Prepare SunRice Naturally Rice & Quinoa as instructed on the packet.
  • Cook the broccoli in a small saucepan of boiling salted water for 2-3 minutes until it is just tender. Drain thoroughly.
  • In a large saucepan over medium heat, heat oil and cook garlic until golden, about 4-5 minutes. Increase heat to medium-high, add kale, and stir for 1-2 minutes until bright green. Season to taste, add vinegar, toss well, and remove from heat. Mix in the rice mixture.
  • Top the dish with a mix of warm broccoli, creamy cottage cheese, crunchy almonds, and fresh chives before serving.
