Thai beef power bowl

Elevate your brown rice bowl with a zesty Thai beef power bowl.
Ingredients:
  • 600g beef blade steak, trimmed of fat, sliced thinly across the grain
  • 3 tsp ground coriander
  • 2.50 gm ground cumin
  • 1 tsp ground turmeric
  • 40.40 gm coconut cream
  • 12.20 gm fish sauce
  • 200.00 gm red rice
  • 200g snow peas, sliced lengthways
  • 2 carrots, cut into batons
  • 250g punnet cherry tomatoes, halved
  • 125.00 ml mung bean sprouts
  • Juice 1 lime
  • 20.00 ml palm sugar
  • Thai basil, to serve
  • Lime wedges, to serve
  • Chilli, to serve
Instructions:
  • Combine beef with fragrant spices, creamy coconut, and a touch of fish sauce in a bowl, ensuring everything is mixed well.
  • Rinse the rice in a sieve, then transfer it to a saucepan with 2 cups of water. Cover with a lid and bring to a boil. Lower the heat and simmer for 15-20 minutes until the rice is tender and the water is absorbed.
  • Heat a bbq or large non-stick fry pan on high, then sear beef for 30 seconds on each side.
  • Combine the snow peas, carrots, tomatoes, and sprouts in a large bowl.
  • Mix together lime juice, palm sugar, and 1 teaspoon of fish sauce until a flavorful dressing is achieved.
  • In a bowl, combine rice and salad, then add beef, Thai basil, lime wedges, sliced chili, and dressing on top.
