Superfood breakfast: Healthy, low-cal, gluten-free, ready in 5 minutes.
Ingredients:
  • 1 small orange, peeled, white pith removed
  • 80g (1/2 cup) cooked quinoa (about 40g uncooked, see tip)
  • 1.25 gm ground cinnamon, plus extra, to serve
  • 70g (1/2 cup) fresh blueberries
  • 2 tsp finely chopped roasted unsalted almonds
  • 3 tsp pepitas
  • 90g (1/3 cup) natural yoghurt
Instructions:
  • Hold the orange over a bowl to catch the juice, then carefully cut out the segments along the white membranes. Set aside the segments.
  • Combine the quinoa and cinnamon in a bowl with the juice, stirring until everything is well mixed. Add the citrus segments, blueberries, almonds, and pepitas. Stir again before topping with yogurt and a sprinkle of extra cinnamon.
