Whip up a quick and delicious salmon rice bowl for convenient weekday lunches.
Ingredients:
  • 450g packet 2 1/2-minute microwave brown rice
  • 300g packet superfood vegetable mix
  • 1/2 bunch chives, cut into 4cm lengths
  • 87.45 gm Japanese roasted sesame dressing
  • 2 x 150g packets pepper-crusted hot smoked salmon, skin removed, flaked
  • 1 large avocado, cut into wedges
  • Pepita and sunflower seed mix, to serve
Instructions:
  • Prepare the rice according to the instructions on the packet using the microwave.
  • In a large bowl, mix together the warm rice, vegetable mix, and half of the chives. Pour in 3/4 of the dressing and toss everything together until well combined.
  • Ladle rice mixture into bowls. Add flaked salmon and avocado on top. Drizzle with the remaining dressing, sprinkle with seed mix and chives. Serve and enjoy!
