Salmon and crunchy noodle salad recipe

Try our Japanese-inspired Crunchy Ramen Noodle Salad - quick, flavorful, and ideal for any meal.
Ingredients:
  • 350g pkt kale slaw
  • 300g hot smoked salmon, skin removed, flaked
  • 200g podded frozen edamame, thawed
  • 3 green shallots, sliced
  • 2 x 250g packet instant noodles
  • 85g (1/2 cup) roasted unsalted almonds, coarsely chopped
  • 6.00 gm black sesame seeds
  • 41.60 gm smooth peanut butter
  • 57.20 gm honey
  • 1 garlic clove
  • 2 tsp finely grated fresh ginger
  • 125ml (1/2 cup) vegetable oil
  • 60ml (1/4 cup) rice wine vinegar
  • 1/2 tsp sesame oil
Instructions:
  • Mix all the dressing ingredients in a bowl until well combined.
  • In a large bowl, mix the kale slaw (set aside the dressing for later), salmon, edamame, and shallot. Break the noodles into pieces and sprinkle them over the mixture. Pour the desired amount of dressing to dress the salad. Toss everything together until well combined.
  • Serve the salad in individual bowls and top with a sprinkle of almonds and sesame seeds.
