Quinoa and Chickpea Salad

Delicious quinoa salad with chickpeas, crisp veggies, herbs, and zesty mint lemon dressing.
Ingredients:
  • 0.5 cup quinoa
  • 1 cup rinsed canned chickpeas
  • 1 cup diced tomatoes
  • 1 cup diced cucumber
  • 1 cup chopped green onions
  • 1 cup chopped fresh parsley
  • 3 tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons chopped fresh mint
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • In a saucepan, bring water and quinoa to a boil. Lower the heat, cover, and let it simmer until the quinoa is tender, for about 15 to 20 minutes. Allow it to cool before using.
  • In a large bowl, mix chickpeas, tomatoes, cucumber, green onions, parsley, and cooled quinoa.
  • Combine lemon juice, olive oil, garlic, mint, salt, and pepper in a small bowl. Drizzle over quinoa and toss to mix.
