Try a flavorful vegetarian quinoa salad with raw chickpeas and zesty lemon-tahini dressing.
Ingredients:
  • 0.25 cup olive oil
  • 0.25 cup fresh lemon juice
  • 2 tablespoons tahini
  • 2 cloves garlic, minced
  • 1 pinch salt and ground black pepper to taste
  • 2 cups water
  • 1 cup quinoa
  • 1.5 cups thinly sliced red cabbage
  • 1 cup raw chickpeas
  • 1 bunch fresh parsley, minced
  • 3 scallions, thinly sliced
Instructions:
  • Combine olive oil, lemon juice, tahini, garlic, salt, and pepper in a bowl and whisk until smooth. Set aside the delicious lemon-tahini sauce.
  • Combine water, quinoa, and salt in a saucepan and bring to a boil. Simmer gently, uncovered, for about 15 minutes until quinoa is tender. Remove from heat, cover, and let sit for 5 minutes. Fluff with a fork before serving.
  • Combine the lemon-tahini sauce with quinoa, red cabbage, raw chickpeas, fresh parsley, and scallions, ensuring everything is well coated for a flavorful dish.
