Toasted quinoa with sweet peppers and garlic, a versatile and hearty side dish packed with protein. Enjoy hot, room temperature, or cold - great for any season!
Ingredients:
  • 1 tablespoon olive oil
  • 1 shallot, minced
  • 1 medium red bell pepper, diced
  • 1 medium yellow bell pepper, diced
  • 1 cup uncooked quinoa, rinsed
  • 2 cups Swanson® Certified Organic Vegetable Broth or Swanson® Vegetable Broth
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In a 2-quart saucepan, heat oil over medium-high heat. Sauté shallot and garlic for 2 minutes, stirring occasionally. Add peppers and quinoa and cook for an additional 2 minutes, stirring occasionally.
  • Pour in the flavorful broth and bring it to a gentle boil. Lower the heat, cover, and simmer for 20 minutes until the quinoa is tender and has absorbed the liquid. Toss in the fresh parsley and season to taste, if desired.
