Basil and red pepper sauce combine for an exquisite flavor in this top-notch recipe.
Ingredients:
  • 1 1/2 cups frozen cut green beans
  • 1 1/3 cups water
  • 3/4 cup uncooked quinoa, rinsed, well drained
  • 1 can (15 oz) cannellini beans, drained, rinsed
  • 1/4 cup sliced green onions (4 medium)
  • 4 leaf lettuce leaves
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
  • 1/4 teaspoon coarse salt (kosher or sea salt)
  • 1 clove garlic, finely chopped
  • 4 to 5 drops red pepper sauce
Instructions:
  • In a 2-quart saucepan, combine green beans, water, and quinoa. Bring to a boil, then lower heat and simmer for 12 to 15 minutes until water is absorbed. Let it sit off the heat for 10 minutes to cool.
  • Combine the cooked quinoa, cannellini beans, and onions in a medium bowl. Cover and refrigerate for 1 hour until chilled.
  • In a small jar with a tight lid, combine dressing ingredients and shake well. Refrigerate until serving.
  • Before serving, drizzle the dressing over the salad and gently mix it to ensure it's well coated. Present on plates lined with fresh lettuce.
