Grilled Halloumi and Mushroom Skewers with Quinoa and Pesto

Skewered halloumi, mushrooms, and tomatoes grilled to perfection, served on quinoa with flavorful pesto and olive oil - a delicious vegetarian meal for two.
Ingredients:
  • 3 cups water
  • 2 cups quinoa
  • 4 large mushrooms, cut into pieces
  • 4 ounces light halloumi cheese, cubed
  • 4 cherry tomatoes, halved
  • 2 tablespoons pesto, or as needed
  • 1 teaspoon extra-virgin olive oil, or as needed
Instructions:
  • In a saucepan, bring water and quinoa to a boil. Lower the heat, cover, and cook until quinoa is tender, about 15 to 20 minutes. Fluff with a fork before serving.
  • Preheat the broiler with the oven rack positioned 6 inches from the heat source.
  • Skewer mushrooms, halloumi cheese, and tomatoes. Broil, rotating skewers occasionally, until halloumi is golden and vegetables are cooked, about 5 minutes.
  • Combine the pesto and olive oil in a bowl and stir until you reach your preferred consistency.
  • Evenly distribute quinoa on 2 plates, then place skewers on top. Gently drizzle with pesto mixture.
