Halloumi Skewers with Tahini Sauce and Dukkah

Grilled halloumi and veggies marinated in tahini sauce and dukkah.
Ingredients:
  • 8 ounces halloumi cheese, cut into 12 cubes
  • 1 eggplant, cut into 12 cubes
  • 1 large red onion, cut into 12 equal pieces
  • 1 large red bell pepper, cut into 12 equal pieces
  • 6 cherry tomatoes
  • 6 radishes, sliced
  • 1 lemon, juiced
  • 3 tablespoons olive oil
  • 1 tablespoon ras el hanout spice blend
  • 2 teaspoons ground black pepper
  • 6 (10 inch) bamboo skewers
  • 6 tablespoons tahini
  • 1 lemon, cut into 6 wedges
  • 6 tablespoons chopped fresh cilantro
  • 6 tablespoons dukkah
Instructions:
  • In a large bowl, mix halloumi cheese, eggplant, red onion, red bell pepper, cherry tomatoes, and radishes. Drizzle with olive oil and lemon juice, then sprinkle with black pepper and ras el hanout. Gently toss to evenly coat. Let it marinate for 15 minutes.
  • Prepare the grill by preheating it to medium heat and lightly oiling the grate.
  • Thread the eggplant, bell pepper, onion, halloumi cheese, tomato, and radish alternately onto skewers. Repeat with the remaining ingredients and skewers. Keep any extra marinade in the bowl for later use.
  • Place the skewers on the sizzling grill and generously brush with the flavorful reserved marinade. Rotate the skewers occasionally to ensure even cooking for 10 to 15 minutes.
  • Combine the tahini and lemon juice in a bowl. Divide the 2 cooked skewers onto plates, then generously drizzle with the tahini sauce. Garnish with fresh cilantro and dukkah before serving with lemon wedges.
