Delicious grilled haloumi skewers make vegetarian barbecue a breeze.
Ingredients:
  • 500.00 ml fresh basil leaves
  • 500.00 ml baby spinach leaves
  • 185ml (3/4 cup) extra virgin olive oil
  • 125ml (1/2 cup) light olive oil
  • 1 large zucchini, halved lengthways, cut into 8 pieces
  • 180g haloumi, cut into 16 pieces
  • 16 grape tomatoes
  • Olive oil spray
Instructions:
  • Blanch the basil and spinach in boiling water for 30 seconds or until just wilted. Shock in cold water to maintain color and freshness. Drain well.
  • Add the basil mixture and combined oils to a food processor, blitz until smooth. Transfer the mixture to an airtight container and refrigerate for 8 hours to enhance the flavors.
  • 1. Preheat the barbecue grill to medium-high heat. 2. Skewer one piece of zucchini, haloumi, and tomato on each skewer. 3. Gently coat them with olive oil spray.
  • Grill the skewers for 4 minutes per side until they are golden brown and fully cooked. Place the skewers on a serving platter and enjoy them hot with the basil oil.
