Halloumi and tomato kebabs marinated in basil-honey vinaigrette for a delicious vegetarian dish.
Ingredients:
  • 0.5 cup olive oil
  • 6 fresh basil leaves
  • 8 ounces halloumi cheese, cut into cubes
  • 0.5 cup balsamic vinegar
  • 2 tablespoons honey
  • 20 cherry tomatoes
  • metal skewers
Instructions:
  • In a food processor, blend oil and basil leaves until combined. Transfer halloumi cheese to a shallow bowl and drizzle with the basil-infused oil. Gently toss the cheese to ensure it's coated evenly. Allow it to marinate for 1 hour.
  • In a small saucepan over medium heat, combine vinegar and honey. Simmer for 7 minutes until the sauce thickens. Remove from heat and set aside.
  • Heat the outdoor grill to a delightful medium-high temperature.
  • Toss cherry tomatoes with cheese until evenly coated, then thread onto skewers.
  • Grill on high heat for a total of 6 minutes, flipping halfway through.
  • Place the skewers on a elegant platter. Drizzle with the tantalizing vinegar reduction and serve promptly. Sprinkle some extra basil on top for an extra touch of flavor, if you wish.
