Mediterranean wrap with salty halloumi cheese, briny olives, creamy hummus, and grilled peppers and onions. Ready in just 30 minutes!
Ingredients:
  • 1 tablespoon lemon juice
  • 1 orange bell pepper, cut into strips
  • 1 small red onion, cut into 1-inch wedges
  • salt to taste
  • 1 (8.8 ounce) package halloumi cheese, cut into 8 slices
  • 4 (8 inch) low-carb flour tortillas
  • 1 cup baby spinach leaves
  • 0.33333334326744 cup Kalamata olives
Instructions:
  • Heat outdoor grill to medium-high heat and place a grill pan on top.
  • Combine the olive oil and lemon juice in a small bowl, ready for use.
  • Combine bell pepper and onion in a small bowl. Drizzle with half of the oil mixture and season with salt to your liking. Place onto the hot grill pan.
  • Grill vegetables until they have a slight char but are still crisp, about 5 to 6 minutes. Remove from heat and let them cool. Reduce grill heat to medium.
  • Brush halloumi cheese slices with the flavorful oil mixture, then grill them on high heat, flipping with precision, until charming grill marks form and the cheese gently softens, taking only 2 to 3 minutes per side. Transfer the deliciously grilled cheese to an aluminum foil-covered plate to maintain its warmth.
  • Spread a generous layer of creamy hummus on each tortilla and layer with fresh spinach leaves. Divide the flavorful mix of peppers and onions evenly on top of each tortilla, then add 2 savory slices of halloumi. Finish by scattering briny olives over the fillings. Roll up the tortillas tightly and enjoy right away.
