Grilled halloumi with tangy caper sauce, a perfect summer appetizer.
Ingredients:
  • 4 tablespoons capers
  • 2 cloves garlic, crushed
  • 2 tablespoons olive oil
  • 0.5 large lemon, juiced
  • 1 teaspoon coriander seeds, crushed
  • freshly ground black pepper to taste
  • 1 (8.8 ounce) package halloumi cheese, sliced
  • 1 tablespoon olive oil
  • 0.5 cup chopped cilantro leaves
  • salt and freshly ground black pepper to taste
Instructions:
  • Soak capers in a bowl of fresh water for 5 minutes to reduce saltiness, then drain.
  • Coarsely chop the capers. Combine them with minced garlic, 2 tablespoons of olive oil, fresh lemon juice, and crushed coriander seeds in a small bowl. Season with freshly ground black pepper to taste.
  • Get the outdoor grill nice and hot while giving the grate a light coating of oil.
  • Coat the halloumi slices with the remaining 1 tablespoon of olive oil.
  • Grill halloumi slices until golden and crispy, around 2 minutes per side.
  • Lay out halloumi slices on a serving plate, generously drizzle with caper sauce, sprinkle with fresh cilantro leaves, and season with salt and pepper to taste.
