Crispy fried halloumi cheese, sweet honey with thyme, tangy pomegranate seeds, and black pepper. Ideal party appetizer.
Ingredients:
  • 10 1/2 ounces (300g) halloumi cheese
  • 1 large egg
  • 1/4 cup (40g) fine semolina or cornmeal
  • 3 tablespoons sunflower oil
  • 2 tablespoons honey
  • 1 teaspoon thyme leaves, finely chopped
  • Couple handfuls arugula leaves
  • 4 to 5 fresh figs, quartered (optional)
  • 3 tablespoons pomegranate seeds
  • Black pepper
Instructions:
  • Slice the halloumi into 8 thick pieces.
  • Prepare the dredge station by beating an egg in a small bowl and spreading semolina or cornmeal on a plate. Dip halloumi slices in the egg, then coat them in the semolina or cornmeal for a crispy crust.
  • Heat oil in a large nonstick frying pan until hot. Fry halloumi pieces until golden brown on each side. Drain on paper towels to remove excess oil.
  • Warm the honey: In a small saucepan over medium low heat, combine the honey and thyme. Heat until warmed and easily pourable.
  • To assemble the dish, place arugula on a serving plate. Arrange the halloumi on top and nestle the figs around (if using). Drizzle each slice of halloumi with hot honey. Finish by sprinkling pomegranate seeds and grinding black pepper over the top.
