Ingredients:
  • 0.5 (8.8 ounce) package halloumi cheese
  • 1 teaspoon olive oil
  • 3 cups cubed seeded watermelon
  • 12 leaves fresh mint, sliced, or more to taste
  • 1 small onion, thinly sliced
Instructions:
  • Break the halloumi cheese into bite-sized pieces. Heat olive oil in a skillet over medium heat. Cook the halloumi cheese pieces in the hot oil, stirring occasionally, until they turn a beautiful golden color, which should take about 3 minutes.
  • Combine juicy watermelon cubes, fresh mint leaves, thin onion slices, and crispy fried halloumi in a vibrant salad bowl.
