Try a refreshing tomato, watermelon, and haloumi salad for a burst of flavor!
Ingredients:
  • 1/2 x 400g Turkish Pide, cut crossways into 1cm-thick slices
  • 60ml olive oil
  • 1 garlic clove, halved
  • 200g haloumi, thickly sliced
  • 62.50 ml dill sprigs
  • 62.50 ml mint leaves
  • 60ml lemon juice
  • 2 kumato tomatoes, cut into wedges
  • 350g mixed tomatoes, halved, quartered or sliced
  • 1 small red onion, thinly sliced
  • 350g peeled seedless watermelon, cut into 1cm pieces
Instructions:
  • Preheat a chargrill on high heat. Brush both sides of the bread with 1 tablespoon of oil and rub with garlic. Grill half of the bread for 2 minutes on each side until charred and toasted. Transfer to a plate and repeat with the rest of the bread.
  • Coat haloumi with a drizzle of oil. Grill until golden on both sides, about 1-2 minutes per side. Move to a serving plate.
  • In a small bowl, mix together the dill and mint. Add lemon juice and the remaining oil, then season to taste.
  • Combine the tomato, onion, and watermelon in a large bowl. Drizzle half of the dressing and mix gently. To serve, arrange on a platter with haloumi, drizzle the remaining dressing, season, and enjoy with bread.
