Tomato and watermelon salad

Get ready for a delightful blend of sweet and peppery flavors with a perfect balance of crispness and juiciness in this mouthwatering side dish!
Ingredients:
  • 60ml (1/4 cup) extra virgin olive oil
  • 5.00 gm caster sugar
  • 700g-piece seedless watermelon
  • 250g mixed baby tomatoes
  • 80g picked watercress sprigs
Instructions:
  • Combine oil, vinegar, and sugar in a small screw-top jar by shaking.
  • Scoop watermelon into balls using a large melon baller. Cut half the tomatoes in half crossways and the remaining tomatoes lengthways.
  • In a bowl, mix together the watermelon, tomato, and watercress. Drizzle with dressing and toss to blend.
