Grilled halloumi with sweet blueberry and red currant salsa, fragrant herbs, and a touch of spice, perfect for a quick and flavorful appetizer or light meal.
Ingredients:
  • 4 ounces fresh blueberries
  • 3 ounces red currants
  • 3 tablespoons chopped fresh mint, divided
  • 3 tablespoons chopped fresh cilantro, divided
  • 1 tablespoon fresh marjoram, stems removed
  • 1 habanero pepper, seeded and minced
  • 2 tablespoons agave syrup
  • 2 limes, divided
  • 0.5 cup cashews
  • 8 ounces halloumi cheese, cut into 8 slices
Instructions:
  • Combine blueberries, red currants, mint, cilantro, marjoram, habanero, olive oil, agave syrup, and lime juice in a mixing bowl. Stir well and let sit.
  • 1. Preheat a nonstick griddle over medium-high heat. Toast cashews until golden, stirring regularly to prevent scorching, for 8 to 10 minutes. Set aside on a plate. Lower heat to medium and sear halloumi cheese slices until nicely browned, about 2 to 3 minutes per side.
  • On a plate, arrange the halloumi cheese and top it with the berry salsa mixture, 1 tablespoon of mint, and cilantro. Sprinkle the chopped cashews over the halloumi and adorn with lime wedges. Serve promptly.
