"Easy weeknight chili with ground turkey, quinoa, and two beans, packed with comforting flavors."
Ingredients:
  • 1 tablespoon ghee
  • 1 pound ground turkey
  • 1 large onion, chopped
  • 1 (15 ounce) can diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 2 stalks celery, chopped
  • 2 tablespoons chili powder, or more to taste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon onion powder
  • Himalayan pink salt to taste
  • 4 cups vegetable broth
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 cup tri-colored quinoa
Instructions:
  • In a Dutch oven, melt ghee over medium heat. Add turkey, onion, garlic, and black pepper. Sauté until turkey is browned, approximately 6 minutes. Discard excess fat.
  • Combine tomatoes, tomato paste, celery, chili powder, Worcestershire sauce, cumin, oregano, garlic powder, onion powder, salt, broth, black beans, kidney beans, and turkey. Stir well. Add quinoa, bring to a boil, then reduce heat and simmer for 40 minutes until quinoa is tender.
