Quinoa and tomato salad with spiced lemon dressing

Quinoa is a versatile and simple addition to your weekly meals, with a cooking style similar to rice and couscous.
Ingredients:
  • 165.00 ml red quinoa, rinsed well
  • 400g tomato medley mix, halved
  • 1 small red onion, thinly sliced
  • 125.00 ml roasted red pepper strips, drained
  • 100g mixed salad leaves
  • 50g feta, crumbled
  • 57.50 gm rice bran oil
  • 1.25 gm smoked paprika
  • 2 garlic cloves, thinly sliced
  • 1 long red chilli, halved lengthways, seeded, thinly sliced
  • 2 tsp finely grated lemon rind
  • 65.63 gm lemon juice
Instructions:
  • To prepare the Spiced Lemon Dressing, warm oil in a small saucepan over medium heat. Add paprika, garlic, and chili. Stir and cook for 1 to 2 minutes until aromatic and the garlic turns light golden. Take the saucepan off the heat and let it cool for 5 minutes. Mix in lemon rind and lemon juice. Season with salt and pepper to taste.
  • Cook the quinoa in a pot of boiling water for 12 minutes until tender. Drain, rinse under cold water, and transfer to a large bowl.
  • Combine tomato, onion, peppers, salad leaves, feta, and dressing with quinoa. Toss gently to mix everything together. Season with salt and pepper to taste. Serve and enjoy!
