Summer vegetarian quinoa salad with fresh tomatoes and red onion - hearty and flavorful.
Ingredients:
  • 2 cups cooked quinoa
  • 2 large tomatoes, quartered, cut into cubes
  • 1/4 medium red onion, chopped
  • 3 tablespoons chopped fresh basil leaves
  • 3 tablespoons chopped fresh Italian (flat-leaf) parsley
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons balsamic vinegar
  • Salt and freshly ground black pepper
  • Dash sugar
  • Grated Parmesan cheese
Instructions:
  • Chill cooked quinoa. In a medium bowl, combine tomatoes, onion, garlic, basil, parsley, oil, vinegar, salt, pepper, and sugar.
  • Transfer the chilled cooked quinoa to a large serving bowl or small platter, then generously spoon the flavorful tomato salad on top. Cover the dish and refrigerate until it's time to impress your guests with this colorful and delicious dish.
  • Garnish with a generous sprinkle of cheese before serving.
