Quinoa and vegetable bake

Delicious and untested recipe from a community member.
Ingredients:
  • 20ml olive oil
  • 250g (1 bag) fresh spinach, wilted and chopped
  • 1 onion, peeled and diced
  • 2 cloves garlic, crushed
  • 1 zucchini, diced
  • 1 carrot, grated
  • 1 red capsicum, diced
  • Handful of semi-dried tomatoes, chopped
  • Handful of fresh herbs, chopped
  • 500.00 ml cooked quinoa
  • 250.00 ml low-fat cottage cheese
  • 2 eggs, beaten
Instructions:
  • Preheat your oven to 180C and gently coat a baking dish with olive oil spray.
  • In a hot frypan, sizzle some olive oil before tossing in the veggies and garlic. Cook until softened, then shift everything to a medium bowl.
  • Combine the herbs, quinoa, cottage cheese, and eggs in a bowl, stirring until well mixed. Season to taste, then transfer the mixture into the prepared baking dish.
  • Bake for one hour or until firm; slice and enjoy!
