Quinoa and vegetable slice

Try this tasty quinoa slice packed with zucchini, tomatoes, bacon, and feta for a satisfying meal or snack.
Ingredients:
  • 200g (1 cup) quinoa, rinsed
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 6 Bacon Shortcut Rindless rashers, coarsely chopped
  • 1 red capsicum, deseeded, coarsely chopped
  • 2 zucchini, coarsely grated
  • 200g feta, crumbled
  • 250.00 ml fresh basil leaves, chopped, plus extra, to serve
  • 8 eggs, lightly whisked
  • 250g tomato medley mix, halved
  • Fresh basil leaves, to serve
Instructions:
  • 1. Preheat your oven to 180°C (160°C for fan forced). Grease a 20 x 30cm slice pan and line it with baking paper, leaving the paper to overhang on the two long sides. 2. Boil quinoa in a large saucepan of water for 12 minutes or until tender. Drain thoroughly. Let it cool, stirring occasionally to fluff up the grains.
  • Heat oil in a large frying pan over medium heat. Cook onion and bacon until golden, about 5 minutes, stirring occasionally. Add capsicum and garlic, cook until softened, about 2 minutes. Transfer to a large bowl and let cool slightly.
  • Squeeze out excess liquid from the zucchini. Combine with quinoa, feta, basil, eggs, bacon in a bowl. Mix well and pour into pan. Press tomato halves on top. Bake until golden and cooked, about 45-50 minutes. Cool slightly, then serve warm or at room temperature, garnished with basil.
