Vibrant quinoa salad with almonds, cranberries, and kale for a refreshing and nutritious dish.
Ingredients:
  • 1 cup quinoa
  • 3 tablespoons olive oil
  • 0.5 cup coarsely chopped mint leaves
  • 0.5 cup dry-roasted almonds, unsalted
  • 0.5 cup dried cranberries
  • 1 cup coarsely chopped kale
  • 0.5 cup sliced carrots
  • 0.5 cup sliced celery
  • 1 scallion, thinly sliced
  • 18 grape tomatoes, halved
  • 1 lemon, juiced
  • 0.5 teaspoon lemon zest
Instructions:
  • In a saucepan over high heat, bring the chicken broth to a boil. Add quinoa, cover, and simmer on medium-low until tender and the liquid is absorbed, about 13 minutes. Stir in olive oil, fluff with a fork, and allow to cool slightly before serving.
  • Mix together fresh mint, crunchy almonds, sweet dried cranberries, vibrant kale, crisp carrots, crunchy celery, flavorful scallion, juicy grape tomatoes, zesty lemon juice, and fragrant lemon zest. Season with salt and pepper to your liking.
