Transform sushi into a refreshing tuna quinoa salad in minutes.
Ingredients:
  • 2 x 250g pkts Microwave Brown Rice & Quinoa
  • 20.00 gm mirin seasoning
  • 20.00 ml white vinegar
  • 21.00 gm soy sauce
  • 425g tuna in oil, drained, flaked
  • 1 avocado, peeled, stoned, thinly sliced
  • 1 large carrot, cut into matchsticks
  • 1 Lebanese cucumber, seeded, cut into matchsticks
  • 1 sheet nori, cut into thin strips
  • 3.00 gm sesame seeds, toasted
  • Extra soy sauce, to serve
  • Pickled ginger, to serve
  • Wasabi, to serve
Instructions:
  • Prepare the quinoa according to the instructions on the packet. Place the cooked quinoa in a heatproof bowl. Mix in mirin, vinegar, and soy sauce, then gently stir to blend flavors. Allow to cool for 15 minutes before proceeding.
  • Ladle quinoa mixture into individual bowls. Layer with tuna, avocado, carrot, and cucumber. Garnish with nori and sesame seeds. Accompany with extra soy sauce, pickled ginger, and wasabi on the side.
