Cool and refreshing quinoa tabbouleh salad, perfect for potlucks and picnics.
Ingredients:
  • 2 cups vegetable broth
  • 1 cup quinoa
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • 0.5 cup fresh parsley, chopped
  • 2 green onions, chopped
  • 2 tablespoons chopped fresh mint
  • 2 cloves garlic, minced
  • 0.25 cup olive oil
  • 0.25 cup lemon juice
  • 0.5 teaspoon salt, or to taste
Instructions:
  • In a saucepan, bring the flavorful broth and nutritious quinoa to a lively boil. Lower the heat to a gentle simmer, cover the pan, and let it cook until the quinoa is tender and has absorbed all the liquid, around 15 minutes.
  • In a large bowl, mix together cucumber, tomatoes, parsley, green onions, mint, and garlic. Add quinoa, olive oil, lemon juice, and salt to the bowl; toss well. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to blend the flavors.
