Vibrant vegan quinoa dish with zesty lime juice essence.
Ingredients:
  • 1 cup quinoa
  • 0.125 teaspoon salt
  • 1.75 cups water
  • 1 cup canned garbanzo beans (chickpeas), drained
  • 1 tomato, chopped
  • 1 clove garlic, minced
  • 3 tablespoons lime juice
  • 4 teaspoons olive oil
  • 1 pinch salt and pepper to taste
  • 0.5 teaspoon chopped fresh parsley
Instructions:
  • Rinse the quinoa under cold water until no longer foamy. Boil with salt and water in a covered saucepan. Simmer on medium-low heat until tender, about 20-25 minutes.
  • Combine the garbanzo beans, tomatoes, garlic, lime juice, and olive oil, then mix in cumin, salt, and pepper for flavor. Garnish with fresh parsley before serving.
