Quke oysters with soy & ginger

Baby cucumbers, also known as qukes, are perfect for snacking and lunch boxes.
Ingredients:
  • 9.00 gm sesame seeds
  • 4 qukes, halved lengthways
  • 21.00 gm soy sauce
  • 2 tsp rice wine vinegar
  • 1/2 tsp sesame oil
  • 1/2 tsp finely grated fresh ginger
  • 2.00 gm brown sugar
  • 12 natural oysters, in the half shell
Instructions:
  • Toast sesame seeds in a small frying pan over medium heat until pale golden, about 2 minutes. Transfer to a bowl.
  • Scrape the seeds from the qukes using a teaspoon and then slice into thin strips.
  • Mix together the soy sauce, vinegar, oil, ginger, and sugar in a bowl.
  • Distribute the dressing evenly over the oysters, then sprinkle with cucumber (quke) and sesame seeds on top.
