Enjoy a refreshing cucumber salad as a light meal or elegant appetizer.
Ingredients:
  • 200g smoked salmon, thinly sliced
  • 2 x 250g punnets qukes, quartered lengthways
  • 2 avocados, halved, stone removed, peeled, thinly sliced
  • 40.00 ml horseradish cream
  • 42.00 gm fresh lemon juice
  • 36.40 gm olive oil
  • 1 bunch watercress, sprigs picked, washed
Instructions:
  • Arrange the smoked salmon, cucumber, and avocado on serving plates.
  • Combine horseradish cream, lemon juice, and oil in a jug. Season with salt and pepper, then drizzle over salad. Garnish with watercress and serve with extra dressing on the side.
