Rabbit Fricassee Cuban-Style

Traditional Cuban rabbit stew - versatile with any meat. Pair with rice and salad. Delight your family!
Ingredients:
  • 1 (3 pound) rabbit, cleaned and cut into pieces
  • 2.5 cups water
  • 1 large onion, chopped
  • 3 cloves garlic, chopped
  • 1 green bell pepper, chopped
  • 0.25 teaspoon saffron powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt, or to taste
  • 1 teaspoon black pepper
  • 2 tablespoons fresh lemon juice
  • 1 bay leaf
  • 1 (8 ounce) can tomato sauce
  • 1 pound potatoes, peeled and quartered
  • 0.25 cup dry white wine
  • 0.25 cup capers, drained
  • 1 cup raisins
  • 0.25 cup chopped green olives
  • 1 (10 ounce) can baby peas, drained
Instructions:
  • In a deep skillet or Dutch oven over medium heat, combine rabbit pieces, onion, garlic, and green pepper. Season generously with saffron, cumin, salt, pepper, lemon juice, and add the bay leaf. Pour water over everything. Bring to a boil, then let it simmer for 20 minutes.
  • Add the potatoes and cook until tender, about 20 minutes. Stir in raisins, capers, white wine, tomato sauce, olives, and olive oil. Simmer for an additional 5 minutes. Finish by stirring in the peas and removing from heat.
