Ingredients:
  • 4 racks of lamb, 3 cutlets in each
  • 130.00 gm tomato sauce
  • 32.00 gm brown sugar
  • 40.00 ml brown vinegar
  • 40.00 ml bottled mint jelly
  • 125.00 gm water
Instructions:
  • Preheat the oven to 200C (180C fan-forced).
  • Place the lamb in a baking dish and bake it for 15 minutes.
  • In a saucepan, add all remaining ingredients and bring to a boil.
  • Take the pot off the heat and drizzle the mixture over the succulent lamb.
  • Lower the oven temperature to 180C (160 fan-forced) and bake for an additional 40 to 45 minutes, periodically brushing the meat with the delicious sauce.
  • Present the sauce on the side.
