Ingredients:
  • 40ml (2 tbsp) fish sauce
  • 60ml (1/4 cup) sweet chilli sauce
  • 60.00 ml chopped fresh mint
  • 6 Frenched racks lamb (4 cutlets on each)
  • 40.00 ml grated palm sugar*
  • 40ml (2 tbsp) peanut oil
  • 60ml (1/4 cup) seasoned rice vinegar
  • 1 lime, juiced, zested
  • 2 small red chillies, seeded, thinly sliced
  • 2 shallots (spring onions), sliced on the diagonal
  • 500.00 ml fresh mint, roughly chopped
  • Sweet potato rosti, for serving (see related recipe)
Instructions:
  • Mix together the fish sauce, garlic, chili sauce, and mint, then massage it onto the lamb. Let it chill in the refrigerator for 30 minutes. Preheat your oven to 200°C.
  • In a hot skillet, quickly sear lamb racks on each side for 1-2 minutes. Transfer to oven-safe tray and roast for 6-8 minutes until desired doneness. Let it rest for 5 minutes before serving. (Adjust cooking time for personal preference.)
  • Create the delightful chilli-mint sauce by blending all the ingredients together and enjoy it right away drizzled over the succulent lamb rack alongside a crispy sweet potato rosti.
