Easy and delicious grilled rack of lamb with a mustard crust that will impress your family.
Ingredients:
  • 0.25 cup olive oil
  • 0.25 cup grainy mustard
  • 1 medium lemon, juiced
  • 1 tablespoon dried oregano
  • 3 cloves garlic, grated
  • salt and ground black pepper to taste
  • 1 (8 bone) rack of lamb, exterior fat trimmed
Instructions:
  • Combine the olive oil, mustard, lemon juice, oregano, garlic, salt, and pepper in a small bowl and mix well.
  • Coat the whole rack of lamb generously with the mustard mixture in a large zip-top bag, ensuring every inch is covered. Refrigerate for at least 3 hours, or up to 6 hours, allowing the flavors to marry and intensify.
  • Prepare and heat up your outdoor grill on high heat. Give the grill grate a light coating of oil.
  • Take the lamb out of the refrigerator and get rid of the marinade. Cover the exposed bones with aluminum foil to protect them from burning and flaking.
  • Grill the lamb over high heat until a dark brown crust forms on each side, about 3 minutes per side. Be mindful not to char the meat.
  • Transfer the meat to the cooler side of the grill, cover, and grill until reaching a minimum internal temperature of 120°F (58°C) for medium rare, approximately 15 to 20 minutes.
  • Place the succulent lamb on a beautiful serving dish, cover it delicately with foil, and let it rest for 5 minutes. Unveil the tender meat, slice it into delectable chops, and present them elegantly for serving.
