Rainbow tomato crostini

Vibrant and flavorful tomato starter using assorted ripe tomatoes. Enhance flavor by selecting vine-ripened tomatoes and letting them sunbathe on your windowsill.
Ingredients:
  • 400 g each of green, yellow, orange and red tomatoes (1.6kg total)
  • 1 bunch of soft herbs (30g) such as flat-leaf parsley, basil, dill, chervil, rocket
  • 2 rustic French baguettes (200g each)
  • 200 g Caerphilly or crumbly goat’s cheese
  • red wine vinegar
  • 1-2 cloves of garlic
Instructions:
  • - For each color of tomato, halve and grate them on a box grater, ensuring to discard the seeds and skins, then season with sea salt and place in separate bowls. - Soak the herb leaves in ice-cold water, slice the baguettes, lay on baking trays, cover with a damp cloth. - Prepare the cheese for slicing. Drain the herbs, toss with olive oil, red wine vinegar, and seasoning. - Toast the bread under a hot grill until golden, rub with garlic. - Serve everything on the table for guests to enjoy.
