Flavorful ranch chip-crusted catfish fillets with a kick of chili powder, baked to perfection.
Ingredients:
  • 1 cup finely crushed ranch-flavored tortilla chips
  • 0.5 teaspoon chili powder, or to taste
  • 0.25 teaspoon black pepper
  • 1 egg, beaten
  • 1 tablespoon cooking oil
  • 4 (8 ounce) fillets catfish, washed and patted dry
Instructions:
  • Preheat your oven to 450 degrees F (230 degrees C. Line a baking sheet with aluminum foil and lightly spray with cooking spray.
  • Combine crushed chips with chili powder, salt, and pepper in a shallow dish.
  • Combine the egg and oil in a separate bowl. Thoroughly coat the catfish in the egg and oil mixture, then coat it generously in the chip mixture. Lay the catfish on a baking sheet lined with foil and sprinkle any remaining chip mixture on top.
  • Bake until the catfish becomes flaky and white in the middle, about 10 to 12 minutes in a preheated oven.
