Zesty North African spice blend for meat, chicken, or fish.
Ingredients:
  • 5 bay leaves
  • 20.00 ml za'atar*
  • 20.00 ml black peppercorns
  • 10.00 gm ground nutmeg
  • 20.00 ml ground cloves
  • 10.00 gm ground cinnamon
  • 20.00 ml coriander seeds
  • 1/2 tsp mace
  • 1 tsp ground cardamom
  • 1.25 gm ground ginger
  • 2.50 gm ground cumin
  • 1/2 tsp allspice berries* or ground allspice
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
Instructions:
  • Combine all the ingredients in a mortar and pestle or spice grinder until blended.
  • Store in a sealed container for freshness for 2 months.
