Raspberry and pistachio meringues

Beautifully simple raspberry and pistachio meringues ready in 15 minutes!
Ingredients:
  • 125g fresh raspberries
  • 125ml thickened cream
  • 140g yoghurt
  • 12.00 gm icing sugar mixture
  • 8 Meringue Nests
  • 50g watermelon, finely chopped
  • 40.00 ml chopped pistachios
  • Mint leaves, to serve
Instructions:
  • Puree half of the raspberries in a blender or food processor.
  • With an electric mixer, whip together cream, yogurt, and icing sugar until stiff peaks form in a small bowl. Gently fold in raspberry puree.
  • Fill meringue nests with the raspberry mixture. Top with watermelon, torn raspberries, pistachios, and mint leaves. Serve promptly.
