Whip up a quick and delicious fruit jam!
Ingredients:
  • 2 pints (4 cups) red or golden raspberries, crushed (2 cups)
  • 5 1/4 cups sugar
  • 1/2 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
  • 3/4 cup water
  • 1 package (1 3/4 ounces) powdered fruit pectin
Instructions:
  • Combine fresh raspberries, a hint of sugar, zesty lemon peel, and tangy lemon juice in a spacious bowl. Allow the flavors to meld together at room temperature for 10 minutes, giving it an occasional gentle stir.
  • Combine water and pectin in a 1-quart saucepan and bring to a boil while stirring constantly. Boil and stir for 1 minute. Pour the mixture over raspberries and stir for 3 minutes until slightly thickened.
  • Transfer the jam into freezer containers, ensuring there is a 1/2-inch space at the top. Wipe the rims clean before sealing the containers. Allow it to sit at room temperature for 24 hours, then store in the refrigerator for up to 3 weeks or in the freezer for up to 6 months. Thaw frozen jam and give it a stir before serving.
