Festive cinnamon raspberry muffins, perfect for a quick and delicious breakfast treat, whether on Christmas morning or any day. Ready in under an hour.
Ingredients:
  • 2.25 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1.5 teaspoons ground cinnamon
  • 0.375 teaspoon salt
  • 3 large eggs
  • 1.5 cups milk
  • 1 cup white sugar
  • 2 tablespoons white sugar
  • 0.75 cup vegetable oil
  • 0.75 cup frozen raspberries
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and generously grease two 12-cup muffin tins.
  • Combine flour, baking powder, cinnamon, and salt in a large bowl, ensuring all ingredients are thoroughly mixed.
  • In a separate bowl, gently whisk eggs. Mix in milk, 1 cup plus 2 tablespoons of sugar, and oil. Combine the egg mixture with the flour mixture, then delicately fold in the raspberries.
  • Fill the muffin cups with the batter using a spoon.
  • Bake in the preheated oven until perfectly golden brown on top, for about 15 to 17 minutes. Allow to cool briefly in the tins, then transfer to a wire rack to fully cool for about 25 minutes.
