Indulge in fruity s'mores cookie bars for a cozy indoor treat.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 8 tablespoons butter, softened
  • 1 egg
  • 1 box (4-serving size) chocolate instant pudding and pie filling mix
  • 2 cups milk
  • 1 cup fresh raspberries
  • 1 cup miniature marshmallows
Instructions:
  • Preheat oven to 350°F and line an 8-inch square (2-quart) baking dish with foil.
  • In a medium bowl, mix sugar cookie mix, softened butter, and egg together using an electric mixer until fully combined. Press the dough into a pan and bake for approximately 23 minutes until slightly golden. Allow it to cool completely for about 1 hour.
  • In a medium bowl, vigorously whisk together the pudding mix and milk until thickened. Gently fold in all the raspberries except for a small handful. Spread this mixture over the cookie base and sprinkle the remaining raspberries on top. Chill in the refrigerator for about 5 minutes until it sets.
  • Preheat oven to broil. Sprinkle marshmallows over pudding and place under broiler for a few seconds until tops are golden brown. Keep a close eye to avoid burning. Serve promptly.
