S’mores chocolate and vanilla freezer pie recipe

Indulgent s'mores freezer pie - a decadent winter afternoon delight.
Ingredients:
  • 250g plain sweet biscuits
  • 100g butter, melted
  • 2L Classic Vanilla ice cream
  • 9 (about 170g) white jumbo marshmallows
  • 160g jam
  • 60ml thickened cream
  • 60g dark chocolate, finely chopped
Instructions:
  • Pulse biscuits in a food processor until finely crushed. Set aside 1 tablespoon of crumbs in a bowl. Add butter to the rest of the biscuits in the processor and blend until fully mixed.
  • Fill a 24cm round fluted tart tin with removable base with the biscuit mixture. Use a glass to press the mixture evenly over the base. Set the tin on a baking tray and chill in the freezer for 30 minutes.
  • Allow the Blue Ribbon Classic Vanilla to soften for 5 minutes. Spread it over the biscuit base and use a palette knife to make the surface even. Freeze for 2 hours or until completely firm.
  • Preheat grill to high. Slice each marshmallow into 3 discs with a sharp knife. Spread jam evenly on the pie, then place marshmallow discs on top. Grill for 30 seconds or until marshmallow is golden. Chill pie in the freezer for 30 minutes before serving.
  • In a heatproof bowl set over a saucepan of simmering water, melt the chocolate with the cream, making sure not to let the bowl touch the water. Stir until smooth.
  • Drizzle chocolate mixture over pie, then sprinkle with reserved biscuit crumbs. Cut into wedges and serve right away.
