Raspberry Summer Pudding (English Style)

Prepare this heavenly dessert a day in advance for optimal results.
Ingredients:
  • 1.5 cups white sugar
  • 1 tablespoon water
  • 3 cups fresh raspberries
  • 6 slices white bread
  • 1 cup whipped cream
Instructions:
  • Combine sugar, water, and raspberries in a saucepan over medium heat. Gently stir until hot and sugar is dissolved. Allow to cool slightly.
  • In a 1 quart bowl, layer 5 slices of bread. Pour the raspberry mixture over the bread and top with the remaining slice of bread. Loosely cover the bowl with plastic wrap, place a weight on top (canned goods work well), and refrigerate overnight.
  • The following day, uncover and carefully turn the dessert onto a plate. Serve cold with a dollop of whipped cream on the side.
