Create a festive family-friendly dessert for Christmas dinner!
Ingredients:
  • 215.00 gm caster sugar
  • 500g raspberries
  • 42.00 gm lime juice
  • 40.00 ml fresh mint leaves
Instructions:
  • Prepare a 7cm-deep, 8cm x 17cm loaf pan by greasing it and lining the base and sides with baking paper, leaving a 2cm overhang. In a saucepan, combine sugar and 1 cup of cold water over low heat. Stir for 3 minutes until sugar is dissolved. Increase the heat to medium-high and bring it to a boil. Let it boil without stirring for 5 minutes. Take the saucepan off the heat and allow the mixture to cool completely.
  • Combine fresh raspberries, zesty lime juice, and fragrant mint leaves in a blender until silky smooth. Transfer the mixture to a spacious bowl and mix in the sugar blend and 200ml of chilled water. Stir well to incorporate everything. Pour the mixture into the designated pan and place it in the freezer for about 1 hour, giving it a good stir every 15 minutes. Cover the surface with plastic wrap and allow it to freeze overnight or until solid.
  • Remove the plastic wrap, then gently invert onto a plate, slice, and elegantly serve.
