Indulge in a quick and easy raspberry-white chocolate bread pudding with frozen raspberries and vanilla baking chips in 1 hour.
Ingredients:
  • 1 cup milk
  • 1/2 cup whipping cream
  • 1 teaspoon vanilla
  • 1/2 cup sugar
  • 1 loaf French bread, at least a day old, cut into 1-inch squares (6 to 7 cups)
  • 2 cups Cascadian Farm® frozen organic raspberries (thawed) (from 10-oz bag)
  • 1/2 cup white vanilla baking chips
Instructions:
  • Preheat your oven to 350°F and generously spray a 3-quart casserole dish with cooking spray.
  • In a medium bowl, whisk together eggs, milk, cream, vanilla, sugar, and salt until combined. Add bread and gently press it into the mixture until absorbed. Mix in raspberries and baking chips, then pour the mixture into a casserole dish.
  • Bake covered for 30 minutes, then uncover and bake for an additional 10 to 20 minutes until golden brown and set.
